Creamy Cheesy Corn & Green Chile Dip

Looking for an easy party dip that comes together with almost no effort? This Creamy Cheesy Corn & Green Chile Dip combines sweet corn, mild green chiles, Monterey Jack, Parmesan, and creamy mayonnaise into a warm, bubbling appetizer that’s perfect for scooping up with crunchy corn chips.

The combination of sweet corn and mildly spicy green chiles gives this dip plenty of flavor without making it overwhelmingly hot. Monterey Jack melts into a smooth, creamy base, while Parmesan adds a slightly salty, savory finish. Best of all, everything is mixed together in one bowl before going straight into the oven.

It’s a simple choice for game nights, movie nights, holiday gatherings, potlucks, or whenever you need a warm appetizer that can be prepared in minutes.

How to Make Creamy Cheesy Corn Dip

1. Preheat the oven.
Heat your oven to 350°F (175°C). Lightly grease an approximately 8-inch baking dish so the cheese mixture doesn’t stick around the edges.

2. Prepare the dip mixture.
Add the drained corn and green chiles to a medium mixing bowl. Stir in the mayonnaise, Monterey Jack, and Parmesan until the ingredients are evenly combined and coated in the creamy cheese mixture.

3. Transfer to the baking dish.
Spoon the mixture into the prepared dish and spread it into an even layer. This helps the dip heat consistently and gives you plenty of deliciously bubbly edges.

4. Bake until hot and bubbly.
Bake for approximately 30–40 minutes, or until the dip is thoroughly heated, bubbling around the sides, and beginning to develop a lightly golden surface.

5. Serve warm.
Remove the dish from the oven and allow it to rest for a few minutes. Serve while still warm and creamy with corn chips or tortilla chips for dipping.

Tips for the Best Corn Dip

Drain both the corn and green chiles thoroughly before mixing them with the other ingredients. Excess liquid can make the finished dip thinner than you want.

For an even creamier texture, grate the Monterey Jack yourself rather than using pre-shredded cheese. If you enjoy more heat, you can also add diced jalapeño, a pinch of cayenne pepper, or a few dashes of your favorite hot sauce.

This dip tastes best straight from the oven, when the cheese is melted and the edges are still bubbling.

What to Serve With It

Corn chips are the classic choice, but this warm cheesy corn dip also works well with tortilla chips, toasted baguette slices, crackers, pita chips, or crunchy vegetables such as celery and bell pepper strips.
